I have 6 ounces Timor Leste beans on the way. I may make paste with 4 oz and vanilla sugar or extract with yhe other two ounces. I will have to read up on the notes of these before I decide.

Found a new variety of vanilla beans from Guatemala, v.Cobansnsis. They are very oily, as you can see in the package, all that vanilla goodness oozing out. They are so cute and short compared to other beans.
I will be bottling more vanilla for sale tomorrow. Let me know if you need some before fall baking. Also the holidays are just around the corner.
