What is raw honey? At Gilly’s Bee’s, we define it as never filtered and never heated above 103 degrees. This leaves the good enzymes in the honey. When you buy raw honey it will crystallize. Can you eat crystallized honey? Yes, it is perfectly safe to eat unless you are allergic to honey. Some people even prefer crystallized honey for spreading and can be used in baking also. There will be a Facebook post on how to return your honey to liquid and while maintaining integrity of the honey.
