Remember the spruce tip sugar I made? Well, behold: spruce tip sugar shortbread cookies! They are absolutely divine!!! And yes, I’ll plan on making some for our grand re-opening!

Did you know spruce tips are loaded with vitamin C? And antioxidants! And they are antimicrobrial and contain essential minerals like magnesium!

The garden is garden-ing!! My little helper volunteered to pull a w**d ❤️❤️

The flower is Calendula! I picked the flowers yesterday (the more you pick, the more they grow). They are traditionally used for skin and gut health as they have amazing anti-inflammatory properties to soothe tissues inside and out!

To the companion gardeners out there, it’s part of the same family as marigolds, so they grow really well with peppers and tomatoes and attract the beneficial pollinators! We’ve got them in almost every bed.

So, the sad news is that we aren’t ready to open yet (lots of work still to be done)… but hoping another week/weekend to accomplish the ever growing to do list!

I am WAY too excited to find that out corn has sprouted!! Look at these babies!! 🥰🌽😍

We planted a smaller sweet corn variety! So miniature corn on the cob!

Started the day off right with a spruce tip sugar latte 🤤

OMG!! This may be one of the tastiest things I have tried lately!! 🌲Spruce tip sugar! I wish I had a picture of the beautiful spruce tips before and during the process, but I was too eager to get to the good part!🤤

This photo is right before I stuck it in the oven to dry. These spruce tips were from a Norway Spruce, which apparently is known to have a more strong citrusy flavor with an aftertaste of pine (compared to, say, a Blue Spruce that is more pungent and pine-forward). I can attest, this sugar is SO citrusy with just a hint of pine! It's absolutely amazing! I can't wait to make some spruce tip shortbread cookies!

Planning to offer some at the grand reopening soon!! 🤞🏻 In an ideal world, if we finish the renovation in time, I’d love to open for Memorial Day! We’ll see how much we can get done in the next few days! 😂🤣
