And you know in that moment that the world has changed. A positive ripple has been sent into the universe. And something along the way resonated. It might have been hearing you and then reading an article, or hearing you and listening to a podcast, but somehow a person is awakened and enlightened. It’s an amazing feeling and a gift that we shouldn’t give up on. Also, everyone learns differently. You might stop explaining yourself because you’re tired or because you’re jaded, but humans have an amazing ability to adapt and change. (New Recipe!) Full recipe below. Enjoy 🍝

Roasted Garlic and Cherry Tomato Spaghetti
__
100g dried spaghetti (around 2 cups cooked)
2 whole garlic
1 cup cherry tomatoes (roughly 15 pieces), sliced into halves
2 tbsp olive oil
1/2 - 1 tsp salt, or to taste
Pepper
Fresh basil
Vegan parmesan

You’ll also need:
Two 4x4 inch sheets of aluminum foil

1. Heat an oven to 450F. I just used an oven toaster.
2. Slice the top of the garlic enough to expose the top of the cloves. Remove some layers of the skin but leave enough to keep the garlic together.
3. Drizzle the garlic with some olive oil and salt. Wrap in aluminum foil (you can check my stories to see how I prepared these). 4. Place the garlic on the baking tray along with the sliced tomatoes. Drizzle some olive oil on the tomatoes.
5. Bake at 450F for 25-30 minutes until tomatoes are cooked.
6. While they’re cooking, boil the water and cook pasta according to package instructions until al dente.
7. Heat a pan. Add in the olive oil. Add the cooked pasta and mix well. Season with salt.
8. Take out each roasted garlic clove. They’ll be soft and easily spreadable (like butter!) and mix into the pasta. Mix in the tomatoes too.
9. Cook for 3-5 minutes on medium heat. Add more olive oil as needed.
10. Adjust seasoning depending on desired taste. Finish off with some pepper, fresh basil, and vegan parmesan (recipe below). Enjoy while hot!

1 cup almond flour/meal*
4 tbsp nutritional yeast
1 tsp salt —in a bowl/container, mix everything! Store in an air tight container in the refrigerator for future use. *you can process your raw almonds in a processor/coffee grinder to create almond flour/meal

Cheesy Chive Hasselbacks by 💛 Recipe:⠀
Ingredients⠀
2 lbs medium potatoes (Used russet and a purple skin/white flesh variety from the farmers market)⠀
2 Tbsp melted vegan butter, store bought vegan cheddar slices, chives, salt, & pepper⠀

How To Make:⠀
1. Preheat oven 450 degrees F.⠀

2. Place chopsticks on either side of the length of the potato, slice 1/8 in slice width wise, work your way down the potato, the chopsticks stop your knife from cutting the potato into slices.⠀

3. After you finish slicing each potato place them in a bowl of cold water for 30-45min.⠀

4. Dry potato and brush tops and sides with melted butter add desired amount of salt and pepper.⠀

5. Place potatoes on parchment lined and bake for 20 min.⠀

6. Take potatoes out, brush again with melted butter, this time being sure to get way in there between the slices because the potato should have fanned out a bit. Bake 20 min.⠀

7. Repeat step 6.⠀

8. This is where the magic happens, add ripped pieces of cheese between slices of potato. You can use as much cheese as you like. I used about 4 slices.⠀

9. Place potatoes back in oven, cook till cheese is melted and bubbly 5-10 min depending on cheese.⠀

10. Topped with lots of chives, coconut bacon, vegan sour cream (optional). Enjoy!

It is pretty mind-blowing when you come to realize how resource heavy and inefficient animal agriculture industry is. I ask myself everyday, how couldn’t I have realized this sooner? How couldn’t I just stopped and thought for a second? Everything is so clear now.

These great vegans/vegetarians, such as Pythagoras, Plato, Leo Tolstoy, Mahatma Gandhi, Albert Einstein, George Bernard Shaw, Nikola Tesla, Schopenhauer, Thoreau, Leonardo Da Vinci, Voltaire etc. knew there could be very limited spiritual advancement while attaining one's nourishment from cruelty and the exploitation of others.

⚠️Disclaimer: Of course not all of them were 100% vegan (if that is even possible) but they ate mostly plant-based, veggie, vegan-friendly, or however you want to call it.
