✨ Flavor of the Week: Everything ✨

How are you doing? I’m glad you’re here.

You know everything bagels? This is that amazing topping mix + healthy seaweed! Kelp is the star of this classic bagel topper from barnacle foods ✨ in Juneau, Alaska. Turns out it tastes good on almost everything. Use this kelpy, garlicky, tongue-pleasing seasoning on top of avocado toast, as a meat rub, tempura add-in, scrambled egg enhancer, or on your favorite toast.

Sending love,

Emily Wilder

It was the honor of my lifetime to help get Olympia oyster shells into the Smithsonian National Museum of Natural History!

Thank you to Elliott Schafer and Swinomish Shellfish Company for growing these gorgeous, tiny, delicious creatures. Thank you to Nia Martin for photographing the dozen oysters we ate and cleaned. And thank you to Sarah Richardson and Katie Ahlfeld at the Smithsonian for reaching out and asking if I had shells to share.

PSA: I always have shells to share!

It feels strange in the best way — I ate these oysters, and now a piece of them is part of the Smithsonian's permanent collection. That's a wild thing to sit with.

A little Oly trivia: this is the only oyster native to the Pacific coast, once blanketing the shoreline from Baja to Alaska. Native communities up and down the coast ate them for thousands of years. They only get to about 2 inches across, but don't let the size fool you — the flavor is a coppery, mineral sweetness unlike any other oyster. By the early 1900s we'd basically wiped out the wild population between overharvesting and habitat loss, and the only reason we still get to eat and grow them is a handful of farms who never gave up on this oyster, combined with decades of restoration work.

Big respect to Puget Sound Restoration Fund for bringing this oyster back from the brink — they've restored over 140 acres of habitat across Puget Sound so far, and they're not slowing down. Want the full story? Rowan Jacobsen's book The Living Shore is a great read on how it got started, and you can hear him talk about his writing on my podcast, Salinity Presents: A Podcast.

I believe our native West Coast oyster is the best-tasting oyster in the world, and that making art out of the shells — earrings, magnets, and pins — is a great way to get people caring about nature and issues like water quality, climate change, and labor rights. Hear more about bringing shell art to your community in my talk at the Pacific Coast Shellfish Growers Association conference this September.

Would you eat buttered popcorn with milk chocolate and caramelized razor clams? It’s delicious!

From 2014-2016, I ran the Shellfish Club at The Evergreen State College in Olympia, WA The Evergreen State College which meant leading work parties every two weeks down at the school’s educational oyster & clam farm (still operating!) and monthly field trips to the coast for razor clam harvesting.

When we came back to campus, I’d challenge the students to come up with out-of-the-box recipes for these tasty wild clams. Caramelizing them with butter and coconut sugar became one of our favorites! Seriously. The recipe is also delicious with geoduck clams, Evergreen’s mascot!
