It is always humbling and eye opening to see and meet many other bean to bar makers from all over the world.

I had a great time sharing and getting tips, learning, meeting with the equipment manufacturers seeing what is coming soon and meeting many of the single origin cacao bean producers.

Alao met in person my main bean sourcerer for 7+ yrs Gino from .

I am going to incorporate many of the techniques and lessons to keep elevating Ninbys artisan chocolate.

At Nibbys we are always looking for a better bean to make 🍫🍫.
This most recent one is from Ghana Three Mountains Cacao.

While chocolate taste is subjective we have shared it with 200+ people and so far have had great feedback.
This now has become my favorite out of the 30+ origins we made from over the last 6 years.

Experimenting with how to put our Notella (previous post) into Nibbys new two ingredients 75% Ghana Three Mountains chocolate..

All I can say, reading books written by professionals on candy making does work as opposed to watching YouTube :), there is a lot of chemistry/physics going on..

We had an amazing visit at with Marinko. He is one of 2 makers in Croatia and truly does this out of passion for the craft.
Among other things he holds the largest chocolate bar and makes playable records out of his chocolate!

We will make sure to load up on some of his award winning Nicaragua bars at the airport on our outbound flight (only way to ensure they don't melt in this hot Croatian summer :) )

I was finally able to use the vanilla beans that we picked up at a spice market in Aswan (city on the Nile in southern Egypt).

A little bit of vanilla just mellows out the Tanzania Bean..

And yes, sunshine is out in SoCal..

Playing with Nibbys Tanzania 70% in During university in my final year I took printmaking, finally I found art in chocolate bloom as well :) And if you are wondering no this is not "bad" chocolate it got melted and tempered again.

Nibbys first Single origin, organic 3 ingredients white chocolate with cacao butter from Ecuador Camino Verde.
Calculating the sugar content this lands in 35% range, so I think it is likely one of the healthier white chocolates (at least that is how we are justifying our kids devouring them).
This proved to be very temperamental to get it to temper properly, even with a new dry melter I just got(it is in the previous post video)..
