The Cezve (derived from the Turkish Cezve) is a thick-walled, conical container with a wide base and narrow neck, on a long handle, made of copper, steel or ceramic. A mixture of ground coffee, sugar, various spices and salt (it depends on a recipe) is poured in water and heated on the cooker or in a pan with fine sand, without allowing it to boil.
To brew this coffee in a mortar, the finest coffee beans are used. Turkish or Arabic coffee tastes the best in this type of coffee maker. There is a large selection of such machines now in shops. They can be heated electrically, or even specially made for induction coffee machines.

The origin of the coffee tree is believed to be Ethiopia. Several Ethiopian legends reveal the origin of the drink.
One legend has it that coffee was discovered by the Yemeni Sheikh Abd-al-Qadir. He is credited with the quote: 'No one can understand the truth until they have tasted the frothy bliss of coffee'.
Other sources say that the discoverer's right belongs to a simple shepherd, Kaldim. He noticed the goats behaving strangely: after eating the leaves of a wild coffee tree, the animals would run wild with excitement. The abbot of the local monastery heard Caldim's story and tasted the leaves, recognising their tonic effect. Thus a drink made from leaves and beans was born that became traditional for the monastery inhabitants and all locals.
