Honey is weird.
These two bottles of honey are from the same hives. Extraced the same day. The bottle on the right has nothing wrong with it its just naturally occurring sugar crystals in a hydroscopic liquid gets cool.
What’s the difference?
Time and heat.
The one on the left has spent several days around 90 degrees to melt crystals slowly without cooking the honey. The one on the right hasn’t gone through that process.
Next week the bottles will be indistinguishable in color or taste. Don’t throw away crystallized honey. Oh and don’t refrigerate honey either. That will make this happen much faster.
