2025 was quite a busy year. I had to put my business aside momentarily to focus on life... a life that involved watching my daughter graduate high school and move in to her college dorm. A life filled with so much travel to places like Costa Rica, Spain and Mississippi to meet my new baby niece. With dance competitions, recitals and a summer with no summer school. Life was busy, but in the most beautiful way.

And through all of that travel, I was able to discover so many new chocolate makers; taste and experience chocolate in different countries. And through all of the busyness, the chaos and sometimes the stress, I consumed over 100 bars/wrapped chocolates/chocolate coated treats, which equated to approximately 16lbs of chocolate!

I might have eaten more than I made this year, but that's part of the journey of being a chocolatier. It's not just about producing, but about exploring, discovering, learning, and tasting!! Lots of tasting!! And man, did I enjoy some memorable bars this year:

🍫 Fossa's Salted Egg Cereal - a must try white made with salted duck egg yolk.
🍫 Mirzam Chocolate with Dates and Fennel
🍫 Chocolate with Crickets and Ants! Worth the experience!
🍫 Markham and Fitz Smoke and Brulee
🍫 Chequesett Chocolate's Maushop's Smoke
🍫 Friis Holm's Slow Dried Organic 64% Madagascar

Lastly, goodbye chocolate covered fruit and coffee, and hello candied ginger!! Hand crafted chocolate covered candied ginger is my new favorite go to and something I plan to make in the future because store bought does not do it justice!

As we say goodbye to 2025 and set new goals for 2026, I hope you take a moment to reflect back on everything this year has blessed you with; on everything it has taught you; and, maybe, like me, on all of the chocolate you consumed. 😝

I decided to kick off this year's chocolate making season with a reel showcasing all of my chocolate finds during our recent trip to Barcelona, Spain; of the chocolate shops I visited, the chocolatey treats I devoured, and of the bars that I brought home, and of the ones that I wished I had had enough money (and enough space on my carry-on) to buy and also bring home. 😅

I loved exploring the city and discovering chocolate shops along the way! Some of the spots I had googled beforehand, and others were a pleasant surprise. My favorite discovery has to be the local maker at the pop-up market right next to the Cathedral. Nothing brings me more joy than supporting a local, small batch maker like myself!! His chocolate was a blend of fine and rustic - at least that's the best way for me to describe it! And he had so many options! I bought a few bars (the one with pepper is muy bien) and devoured a truffle - which OMG 🤤- and a bag of chocolate covered ginger - also OMG 😋.

One of the most unique, or regionally popular chocolates that I discovered was chocolate covered dried whole figs, some stuffed with a ganache or cream! As a lover of figs, I was super stoked to find these!!!

Some other faves I'd like to highlight:

Chocolate Amatller captured my attention with its 19th/20th century artistic packaging/ tins and bite size pieces - and later on, intense, explosive flavor!! I knew had to grab at least one keepsake tin!

I have to mention Fargas. We met the coolest and most informative employee who showed us the stone grinder located in the middle of the shop and gave us samples of the final product: a rustic, gritty chocolate made of just cacao beans and sugar. 😋

And then there were the churros con chocolate and the airport full of craft chocolate...so much to say, never enough space. So I'll let the photos to the rest of the talking. Happy chocolate season 🍫

The chocolate jars are completely empty, but my heart is so full ❤️ I cannot thank you all enough for the love and support you've given me and my little business this season. It makes the countless hours of melting, tempering, molding and packaging chocolate allllll worth it.
I also want to send a huge thank you to Paige at the Town of Nags Head, the team at KDH's First Flight, and Alex at SoundSide for all of their hard work and dedication to organizing the markets. I wouldn't have had as successful of a season without them!!
I will be taking a little break between December 21st and January 2nd to relax, enjoy time with my family (hello Disney!!), celebrate my 38th birthday and plan for my daughters' 10th and 18th birthdays (the work really never ends 🤪).
Upon returning, I will be focusing on two major projects: a local collab and a brand new product that I hope to sell throughout the year, including the summer!! I can't wait to reveal what I've been working on with all of you!!
Until then, I hope you all have an amazing holiday filled with love, laughter and lots of R&R. I will see you in the New Year!
