These yummy peanut butter cookie bars were our featured recipe on last month's 17th Annual Currier & Ives Holiday Cookie Tour. With only 7 basic ingredients, they're easy to make (thankfully, since we had to make over 300 of them for the Tour!) Best of all, they're surprisingly nutritious and can be totally GF if you use gluten-free oats. Make a batch and watch'em disappear!
New England Everyday Goods’ Flourless Peanut Butter Oatmeal Bars Recipe
1 cup creamy peanut butter (i.e. original Skippy)
¾ cup light brown sugar, firmly packed
1/8 teaspoon salt
½ teaspoon baking soda
1 large egg (at room temperature)
1 teaspoon vanilla
1/3 cup old-fashioned rolled oats (not the quick cook variety)
Optional: ½ cup chocolate chips (or M&Ms or Reese’s pieces)
Place rack in the center of your oven and preheat to 350°F. Generously coat bottom and sides of an 8x8-inch baking pan with cooking spray. Set aside. In a large mixing bowl, beat together the peanut butter, brown sugar, baking soda, and salt on medium speed until well combined. Add the egg and vanilla, then mix on medium low, just until incorporated. By hand, stir in the chocolate chips and oats. Press the dough into the prepared baking pan. Bake for 18-20 minutes, until golden and the top is set. Allow to cool completely in the pan before cutting into bars (9 large
or 16 medium) and store in an airtight container for up to 4 days or freeze for up to 3 months.
