Mic check….. is this thing still on?
Is it safe to come out now? Is the pandemic over? Sure feels like we are way more than 6 feet apart from each other.
Hey boys and squirrels. Been a minute, miss ya’ll in so many ways. Corona killed our mojo for the service industry, took away the joy of serving farm to table cuisine from us. The saying adapt or die definitely took new meaning for us, and many others during 2020. My wife and I switched gears, she got involved in the health industry and I traded my apron for a hard hat. When I was 6 years old, my uncle paid me $100 a month to move a pile of rocks from point A to point B. I was the tannest, richest 6 year old I knew. There is even a kindergarten drawing buried in a container somewhere with me drawing myself as a roofing company owner.
For those who don’t know, Snow Topi was originally intended to be a shaved ice concept. We flew to Taiwan (where my wife was made), purchased the equipment directly from the factory, and shipped to ourselves. We got a spot at the town hall farmers market. Almost immediately, I became aware that keeping the blocks -10 in Houston weather was not feasible. I had been a consultant for a crepe concept, and came up with the idea to instead make sweet and savory bubble waffles. With my passion for the best ingredients, steak night was a continued evolution of that same drive, just a different outlet. I say all this in case any of you are or have been considering opening your own business: DO IT!! The hardest part is letting go of your comfortable normals, almost immediately you will be rewarded for your efforts in ways you can’t comprehend until you try, fail, and succeed on your own.
Snow Topi was a beautiful time of our lives, a passion driven concept focused on the best ingredients possible. To all of you fine folk who allowed me the privilege of not cooking your steak well done as requested, but medium-well instead, it is I who owe you many thanks. It brings me great joy not only push my comfort limits, but challenge others to do so as well. You never know what you like until you try it, and things progress as we age and opinions change.
One thing is for sure, I enjoy the merits of hospitality. I recently opened my own roofing company, and invite anybody interested in following our shenanigans to check out our newly formed Insta or Facebook, where I continue to shamelessly use my dogs as customer service agents and safety officers. Every job I get hired for is one less day they have to stay home with the cat.
To any of our pop up and catering folks, we have several items that could use a good home, food grade storage containers, utensils, dinner plates etc. Please reach out if these would have a purpose for your business or home, we are on a different chapter of our lives. We still visit the markets to get the goods, but now for personal use.
To anybody on this page affected recently from a roofing or waterproofing standpoint, we are working the cypress and spring area this week. I have a generator and bottled water if you need a boost or some juice. Or just shoot me a message and invite me over for dinner!! We hope everybody has found the ability to move forward through the many struggles over the recent years, and thank all of you for being part of our past and future success.
