🥒🥗 Creamy Cucumber Salad 🥗🥒

Ingredients:

2 large English cucumbers, thinly sliced
1/2 cup sour cream
2 tablespoons mayonnaise
1 tablespoon white vinegar
1 tablespoon fresh dill, chopped
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

In a large mixing bowl, combine sour cream, mayonnaise, white vinegar, chopped fresh dill, granulated sugar, salt, and black pepper. Stir until the dressing is smooth and well combined.
Add thinly sliced English cucumbers to the bowl with the dressing.
Gently toss the cucumber slices with the dressing until they are evenly coated.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill.
Before serving, give the creamy cucumber salad a final toss to ensure that the dressing is evenly distributed.
Serve chilled as a refreshing side dish.

Tips:

For added flavor, you can add thinly sliced red onion or chopped fresh parsley to the salad.
If you prefer a tangier dressing, you can increase the amount of white vinegar or add a splash of lemon juice.
This salad can be made ahead of time and stored in the refrigerator for up to 24 hours.

Siopao (steamed bun)

Siopao Dough:
3 cups cake flour
â…“ cup sugar
1/4 tsp salt
1 tsp rapid rise yeast
1 tsp baking powder
1 cup lukewarm milk
3 tablespoon oil
Note: 1 tsp of vinegar to be added in the water for steaming to make the dough whiter

Combine flour, sugar, yeast, salt and baking powder in a large bowl. Pour in milk and mix several times just to moisten the dry ingredients. Add oil and mix until a dough forms.
Tip the dough into a flat surface and knead until smooth and elastic. Usually takes about 10-12 minutes by hand or 8-10 with mixer.
Rest the dough for 20-30 minutes or until it has risen to just almost double the original size. (Meanwhile, prepare the filling)

For The Asado Filling
1 tablespoon canola oil
1 small onion, peeled and chopped
2 cloves garlic, peeled minced
1 pound pork butt or shoulder, cut into large chunks
2 cups water
â…“ cup soy sauce
2 tablespoons oyster sauce
3 tablespoons sugar
2 star anise
1 tablespoon cornstarch

Steps:
In a pot over medium heat, heat oil. Add onions and garlic and cook until softened.
Add pork and cook, turning as needed, until lightly browned.
Add 2 cups of the water, soy sauce, oyster sauce, sugar, and star anise. Stir until well-dispersed. Bring to a boil, skimming scum that may float on top.
Lower heat, cover, and continue to cook for about 1 hour or until meat is fork-tender. Add more water in half cup increments as needed to maintain 1 1 /2 cups liquid.
With a slotted spoon, remove pork from the pot and let cool to touch. Using two forks, shred meat.

Finale:
Cut the dough to 16 equal parts. Add 1 tbsp of filling, then make pleats, twist and seal on top. Add wax paper at the bottom of the dough. Rest the filled siopao for about 30 minutes. Steamed at medium heat for 12-15 minutes. Enjoy!

Group A preview: England, France, Greece, Samoa

It is arguably the tournament's toughest group to pick a winner from, with host nation England set to battle it out with a star-studded Samoa side which includes the likes of Jarome Luai, Josh Papalii and Joseph Suaalii.

That means the tournament’s opening game between the two sides on October 16 (AEDT) carries huge importance, with the winner of it a good chance of advancing as the group’s top seed.

NRL reports England have picked a mix of talent from the NRL and Super League, with Roosters lock Victor Radley, exciting Knights back Dominic Young and Raiders veteran Elliott Whitehead among the squad.

With Roosters coach Trent Robinson on board as director of rugby, there are hopes France can compete despite the tough group they find themselves in, with the added bonus this year of having had two French club sides in the Super League.

While they aren’t favoured to advance, Greece have some handy players in the shape of South Sydney halfback Lachlan Ilias and former Sharks forward Billy Magoulias.
