Rewind 3 years to Feb 2023. We visit Kaua’i and tour the Lydgate cacao farm. Their tour was so inspiring and informative I decided to become a chocolate artisan. I had no idea what I was in for, but that journey began. Many cacao beans later, I have developed skills and recipes from the school of hard knocks. I am extremely proud of my first successful fermentation of cacao that has turned into amazing 60%dark chocolate.
The journey continues as the local cacao keeps growing. Come in to our shop, “Ohana Fiber Mill” (my other job) and taste some locally sourced dark chocolate for yourself and let me know what you think.
