I did an experiment.
Last night I started soup on stove (sautéing the vegetables) at 6:00 and it went into a 200° oven at 6:30 and my husband turned it off at 10pm. We left the pot in the un opened oven all night. This morning at 7 I opened it, the Dutch oven was still quite warm and the beans were completely tender throughout. I just added the kielbasa, more water, and 2 cans of tomatoes and I will let it go in a 200° oven again for 1-2hrs.
I usually babysit this a little when I make the oven version for sale day, I check it a few times and add water as needed. But I let it cook for like 10hrs in a low 180°-200° oven.
Also because every year so many people ask for a jar that is the same as what I give out to sample on sale day. There isn’t one, there are ones that are closer and I pick those out for people, but I always say they’re all the same even though they are all different they all end up tasting the same. This time I picked out the most different jar, the jar that had mostly not beans that are in the batch I make for sale day. (The sale day batch is made from the mixed one pound bag of beans) This jar had large butter beans, they usually breakdown and dissolve when I cook the soup all day in the oven and forget about it on the stove, chickpeas, mung beans and brown fava beans from the specialty foods market, lentils and split peas. Shockingly 😆, it tastes just the same! In this application a bean is a bean is a bean. So buy the jar that makes your eyes happy!!!!
Ps, I still have quarts if you need more.
