What is Picanha (Coulotte), you might be asking?
Coulotte steak and picanha are the same cut of beef—the top sirloin cap (biceps femoris muscle)—differing primarily by region and naming convention rather than the cut itself. Known as "picanha" in Brazil, it is prized for its thick fat cap and triangular shape, while "coulotte" is the standard American term, often trimmed of the fat cap.
