We're always learning things about coffee and I've stumbled upon a game changer. Cold brewing. I've been cold brewing a little over the years but recently have dived a bit deeper with brewing concentrate, thhen diluting that concentrate with water and milk to create drinks.

The big difference is the the amount of flavor that is derived from the brew. With hot brewing, the near boiling water is passed through the grinds relativly quickly and then the coffee must cooled to be drink.

With cold brewing the water sits in the grinds for up to 20 hours and is pulling flavors out of the coffee. You can then enjoy a cold coffee with ice or you can heat it up in the microwave for about a minute and have a hot coffee. This warmed up coffee will taste unlike the usual warmed up hot brewed coffee. First of all, it'll taste fresher and you'll notice flavors you have never tasted before. It can be on the exotic side for some coffees like this Ethiopia Yirgacheffe Aricha Dry Processed coffee. There is a floral aroma and after taste that finishes off the sup of coffee.

Okay I understand. Floral? Coffee? That probalby sounds gross to some. LOL! But for me it's about exploring the unending array of flavors produced coffee bean.

And speaking of exploring, we have two coffees that have arrived this week for roasting. One from Peru and another from Guatemala. As things go as planned they'll both be available this weekend at the St. Albans Farmers Market along with the cold brew of the week.

Not all coffee beans are created equal. Certain type beans and blends make for better tasting dark roasted coffee. The bean gets very hot, in the 460 degrees range. How the bean breaks down at this temperature will affect the taste. We will be offering dark roasted coffee that will best present the flavors needed for espresso drinks and darker roasts such as French and Italian along with some new packaging.
