We had a pretty simple and traditional ham dinner. The first picture is of the salad I served. It was so pretty, so bright, and so flavorful! Here is the recipe for it:

Snack time!

We really struggle to get an entire bunch of bananas eaten before they are brown in this house. I’ve had a hankering for granola so here we are… Banana Bread Granola. It smells even better than it sounds.

Here is the recipe I loosely used:

I did add h**p hearts, chia seeds, a little bit of nutmeg, and an extra banana to the recipe. I also did half pecans and half sliced almonds because that what I had on hand. There are a few chewy banana spots in it and I really like that. You could mix in some chocolate chips after it cools as well if you are feeling froggy!

Hearty Dinner Alert 🚨

Garlic Steak Bites, Mashed Potatoes, and Caesar Salad with homemade dressing.

I’ve been an avid proponent for making your own salad dressing for a very long time. Caesar Dressing is magnificent. There are a million different recipes out there. Long story short… get yourself some anchovy paste to live in the fridge and keep lemons on hand. Then you are pretty much good to go whenever the craving strikes. Here is the recipe I used tonight:

Next up… Garlic Steak Bites. There are plenty of recipes out there for these too. Here is how I do mine:

I buy stew meat. That’s right. Cheap cuts. And I promise they are yummy and economical. And if you are cutting up ribeyes for steak bites, is your silverware real silver?

I put about a cup of flour, at least 2 tablespoons of seasoning (I like the Kinder’s Cowboy Butter, garlic powder, paprika, onion powder, and pepper). Then I drop all of the stew meat in there, seal it up, and shake it until everything is coated. I brown all of the meat in batches and put into a baking dish.

Then I halve up some mushrooms and do a quick sautƩ in the left over oil from the beef and add them to the baking dish. I also throw in a handful of garlic cloves. Measure those with your heart.

Next, I mix up some beef broth, Worcestershire sauce, and the secret ingredient… a few tablespoons of maple syrup and pour over the meat. I throw a few k***s of butter on top, cover with foil, and put the whole thing in the oven for at least an hour. The longer it’s in the oven the more tender the bites will be. I usually set the oven around 300-325 degrees. Tonight was 275 because I also had a pot of garlic confit going.

Big yumm. A little lengthy for a typical weeknight dinner, but I was home a little early today from work so it worked out.

Cowboy Potato Leek Soup

Bacon šŸ„“(sliced into 1 inch pieces). When you need the fat really rendered out of your bacon, start with a cold pan.
2 Leeks sliced
1 lb hamburger meat (I had some browned hamburger leftover from another meal)
1 small onion šŸ§… diced
3-4 potatoes šŸ„” diced
1 can of corn 🌽
Kinder’s Cowboy 🤠 Butter seasoning, roughly 1 1/2 tablespoons
2-3 tablespoons of flour
4 cups chicken broth
3 cups shredded cheddar cheese
1/3 cup heavy cream

Cook down your bacon. When it is just a little before your desired doneness, add the leeks. Since my burger was already cooked and just needed warmed through, I left the bacon leek mixture in the pot, but if I was starting with raw burger, I would pull out the bacon and brown the burger in the bacon grease. Add your seasoning. Add corn. Add the flour and cook for approximately 3 minutes. Add back the bacon if you took it out. Add the potatoes. Pour the chicken broth over and mix everything well. Bring to a boil and then turn down to a simmer for 10-15 minutes until the potatoes are done. Finally, stir in the cheese and heavy cream. Enjoy!!!

It’s feast or famine around this outfit.

Tonight for supper was Bang Bang Shrimp šŸ¤ Rice Bowls.

The rice I make the most around here my family calls THE Rice. It’s the only thing I make in the instant pot. It goes roughly like this:

Set the Instapot to SAUTƉ. Drop a few tablespoons of butter in and let it melt. Then add 3/4 of a cup or so of Orzo. I know, that’s not rice. Toast it until it’s golden brown. Then add 1 1/2 cups of rice. Toast it for a minute or two as well. Then add some chicken bouillon, enough water to cover it all with 1/2 inch to spare. Lid on. Set the Instapot to RICE šŸš and go on about your business.

For the shrimp, I mix some Asian inspired spices with cornstarch in a ziplock bag and then toss in cleaned shrimp without the tails and shake. Fry em up in some oil. The Bang Bang sauce is just equal parts mayonnaise and sweet chili sauce and a tablespoon or two of Sriracha for good measure.

The bowls should be colorful and loaded with veggies. These bowls had THE Rice, grated carrot, steamed edamame, sliced avocado šŸ„‘, and some colored tortilla strips for crunch. Drizzle with sauce and they are good to go. These would also be great with some thin sliced cabbage, broccoli, sugar snap peas šŸ«›, etc. Whatever is in your fridge! Simple. Filling. Delicious.

Migas for breakfast!

We were reminiscing about a trip we took to Texas several years ago last night. One of our favorite things from that trip was breakfast tacos and margaritas. I did my best to recreate the feeling this morning.

Migas is basically a skillet breakfast with Hispanic flavors and a warm tortilla.

This had bacon šŸ„“, sweet potato šŸ , onion šŸ§…, scrambled eggs, cojita cheese, avocado šŸ„‘ poblano crema, and a warm tortilla. Simple. Flavorful. Filling. Delicious.
