That Mary Poppins, she’s so wise, isn’t she? We can all relate to this right? At some point in our lives we’ve all had to swallow something medicinal, something proclaimed to be good for us, healing, or detoxifying. And typically, it’s bitter. Hard to swallow, tastes yucky! The sweet follow up makes it so much more tolerable. ⁠

Let’s talk about this! How sweet and bitter work in harmony. Believe it or not, it’s not just sweetness that helps the bitter go down, the bitter also compliments the sweetness. It’s easy to comprehend how sweet helps us embrace bitter, but did you know that bitter can actually help you stop eating too many sweets? ⁠
⁠
You see, bitter flavors have the ability to make us feel full, satisfied and can guide us to stop eating when we are paying attention. It actually relates to the medicinal aspects of bitter flavors. Bitter is detoxifying, but like all medicines, just because a little is good, it doesn’t mean a lot is better. It’s this level of bitter medicine in flavors that our bodies can detect and say, “OK, I’ve had enough now!” and you can feel the desire to stop eating. ⁠

It’s why it’s easy to overdose on sweet cookies, but rarely do you eat too many orange slices! Oranges have a bitter pith on the outside of them. Similar to all fruits that also have a slight balance of bitter in their flavors. Nature has a way of understanding that we need to balance our sweets with other flavors. ⁠

So take your “sugar” with your “medicine” and your bitter with your sweet! ⁠

When we talk about Living Flavors™, and why the source of flavor matters it’s obvious that the first question would be, what am I supposed to use?⁠

It’s less complicated than you think. When you think of something salty in nature, what do you think of? The ocean quickly comes to mind, and in the ocean there are naturally occuring salts, including those found in one of my favorite salty flavor go-to’s. This Icelandic Kelp from Burlap and Barrel is a beautiful example of a deep, complex multi leveled flavor. The beauty is that it’s not salt alone, it’s herbal, minerally and umami too!! ⁠
