Do you know what we mean when we say Specialty Coffee?

Specialty coffee refers to the highest quality coffee beans produced. Less than 10% of all the coffee grown throughout the world meets the standards of specialty coffee. The Specialty Coffee Association of America (SCA) defines specialty coffee as achieving a score greater than 80 on a 100-point scale. The beans must be free of defects and have attributes like flavor, aroma, sweetness, and mouthfeel.

Additionally, specialty coffee is:

*Grown at higher elevations, often on steep mountain sides.
*Picked by hand, verses machine. This ensures that only the ripe coffee cherries are harvested.
*Once the de-pulping and drying processes are complete, the beans are immediately packed in air-tight grain-pro bags to prevent moisture and oxygen from causing mold and ruining the beans.
