The man behind the bottle:
Master Brewer Noguchi Naohiko is known throughout Japan โ and the sake world โ as "the God of Sake Brewing." In his eighties and still working tirelessly every day, Noguchi's career spans more than seven decades of unmatched craft. In 2017, the Noguchi Naohiko Sake Institute was founded with a singular mission: to immortalize his techniques, mentality, and vision โ passing his wisdom to the next generation of brewers who work alongside him each day.

This is sake in its purest, most uncompromising form โ three "no"s that define its character:

๐ซ Nama โ Unpasteurized: alive, vibrant, and raw with natural character

The Hiyaoroshi process:
Spring-pasteurized once, then left to sleep and mature through the summer in the cool of the brewery โ only released when autumn's chill arrives. A tradition as old as Japan itself, delivering a sake of extraordinary depth and harmony.
Tasting notes:
The palate opens with a full, rice-forward aroma, vibrant sweetness and bright acidity, with a pleasantly lingering bitter finish. Best served warm at approximately 40ยฐC, where the synergy with food reaches its full potential.
