The Pavlova, a dessert believed to have been created in honor of the graceful ballerina Anna Pavlova, is known for its delicate contrast of textures — crisp on the outside, soft and airy within.

This past weekend at Frederic Loraschi Chocolate, we revisited this classic with our Lychee Pavlova: a crunchy meringue filled with lychee compote, fresh lychee, and a mascarpone rose water custard delicately balanced in sugar to counter the sweetness of the crisp meringue.
