-Meet The Maker 1- “I grew up as a bit of an odd kid. Life definitely wasn’t handed to me, I lost my mom at the age of 13 and my dad and I have had an amazing relationship, very grateful for them both. We were hit hard by the market crash in 2009 and I had to work to support my dream of being a professional golfer. I made it to rank 1 in North Texas and ended up moving to Arizona when I was 18 to play. I picked up as side job selling bread for a local bakery (Bread Basket Bakery which was recently sold and doesn’t exist anymore) and decided to start something on my own. I teamed up with my best friend at the time Kasey McCaslin and we started a chocolate company together. We just figured it would be a fun side gig for a while but it kinda took off. Crafting single origin chocolate from bean-to-bar I kinda fell in love with the process and felt it was my true calling in life. After 5 years of experimentation and analysis and intense learning we finally won our first bronze medal at the International Chocolate Awards. I cried. I felt seen and felt that my work and my change in life path was validated. Fast forward to now, we’ve won the world gold medal in two different categories in Italy, 26 international chocolate awards, and 3 good food awards. I am absolutely humbled at the success of my dream and my life path. I want to thank each and every one of you who make my dream and my passion possible. Thank you for supporting us and coming out week after week to try our new crazy creations and share a smile with me. I hope you’re ready for all the insane creations we are working on for next week!!! Get excited!!! Cause we’re back ❤️❤️❤️🍫🍫”

Potato skins for dinner? YES PLEASE! Thanks to Louise (Heron Shores Enterprises) for delivering potato skins stuffed with our Baconberry sausage and Asiago cheese. We matched her effort and stuffed Black Garlic & Honey sausage into two more skins. Then topped it all with eggs and bacon. Grab your AZ-raised pork sausage (and a tote from Heron Shores) this weekend at one of our markets or weekdays at our kitchen. Recipe below. —- SATURDAY! THOM is at Gilbert Farmers Market (7-11) BRIAN is at Phoenix Public Market (8-1) Directions and more at TheProperBeast.com. —- SAUSAGE STUFFED POTATO SKINS Makes 4 potato skins INGREDIENTS • 2 medium size russet potatoes • 2 tablespoons butter melted • salt and pepper to taste • 1/2 cups Asiago cheese, shredded • 2 slices thick-cut bacon, cooked and crumbled • 1 green onion, chopped • 2 fried eggs (optional) • sour cream for serving • salsa for serving INSTRUCTIONS 1. Clean the potatoes and prick them all over with a fork. Rub with olive oil and microwave on high for 5 minutes per potato. 2. Preheat oven to 450ºF. 3. Let potatoes cool enough to handle and then cut in half horizontally and put in an oven-safe container. Use a spoon to scoop out the insides, leaving 1/4" of potato on the skin. 4. Coat inside and outside of the skins with melted butter. Season with salt and pepper to taste then bake for 10–15 minutes until crisp. 5. While potatoes crisp, cook Baconberry sausage (or other The Proper Beast™ sausage) in a skillet and set aside. 6. Remove crispy potatoes from oven, fill the shells with sausage and top with cheese. Sprinkle with crumbled bacon and place under the broiler for 1-2 minutes or until the cheese is melted and slightly browned. Remove and sprinkle with green onion. 7. Top with fried eggs and serve with sour cream and salsa.
