I never thought I’d be able to say that I made a chocolate delicacy using ripe fruit from my backyard.

Introducing the Peach Biscuit filled bonbon.
Creamy white peach ganache with a buttery almond cookie base.

A fleeting seasonal beauty made with freshly picked white peaches from our very own tree that sprouted up where it pleased, without a human hand to interfere.

We’ll have these little treasures at events as long as the batch lasts.

A moment to speak on my dad:
He passed away from kidney cancer last week and I thought about him a lot as I worked on this project.

My dad taught me to relish the idea that I can build something I don’t yet know how to build, and I’m living out the power of this idea every day.

This season brings more change for me than I’ve ever seen, and I’m diving deep into it with creative eyes and an open heart.

These chewy delicacies will be available this weekend ONLY as a special treat for some Peekskill concert-goers!

We had so much fun hand-dipping these gorgeously soft and chewy mangoes into our 75% dark chocolate. We’ll be offering packets of the little treasures in the lobby of Paramount Theater from 7-8pm, before the evening’s performance and at intermission (if there are any left!).

As we move into the insanity of peak chocolate season, I need to give a big gushy thank you to my best friend, my booth setup and break-down extraordinaire, head of R&D for chocolate recipes (enforces minimum cardamom content as per spice safety protocol), anger translator and bonbon haggler, early AM driver, post-market napper, the cap to my bonbon, you help me keep it all together.
