Day 7, the ending of National Afternoon Tea Week🫖

I have enjoyed all of the tasty elegance this week has brought🥰I hope you have too

Today we are having Blueberry Scones with Lemon Curd and Cream & Lady Grey

Lady Grey is the ultimate pairing for this combination because it bridges the rich, heavy textures of the cream and scones with the sharp, vibrant acidity of the lemon curd.

Recipe for scones:
Yields 16 small triangles

Ingredients:
2 cups all-purpose flour
1/3 cup sugar
2 tbsp baking powder
1/2 tsp salt
6 tbsp cold butter
1/2 cup heavy cream
1 egg
1 tsp vanilla
1 cup fresh blueberries

Directions:
Preheat oven to 400 degrees
Whisk 2 cups flour, 1/3 cup sugar, 1 tbsp baking powder, and 1/2 tsp salt.
Cut in 6 tbsp cold, cubed unsalted butter until crumbly.
Whisk 1/2 cup heavy cream, 1 large egg, and 1 tsp vanilla extract.
Gently fold in 1 cup fresh blueberries.
Split the shaggy dough into two equal portions instead of keeping it as one large mass.
Pat each portion into a smaller, 5-inch circle (about 3/4-inch thick).
Slice each disk into 8 small wedges using a sharp knife or bench scraper to get 16 mini triangles total.
Place wedges on a lined baking sheet and for 12 to 15 minutes until golden.
To make a glaze, use 1 cup powdered sugar and 2 tbsp milk. Apply to the scones after they have completely cooled.

Day 6 of National Afternoon Tea Week🫖

Today we are having Mango Chutney Apple Tea Sandwich & Gunpowder Green Tea

This pairing succeeds by using smoke to anchor a vibrant clash of sweet, salt, and acid. Gunpowder Green’s heavy, toasted smokiness cuts straight through the sharp, lactic tang of fresh goat cheese. Instead of fighting the mango chutney, the tea’s savory undertone acts as a bold backdrop, framing the fruit’s sweet brightness. Finally, the crisp, vegetal finish matches the clean snap of the fresh apple, perfectly cleansing the palate after every rich bite.

Recipe:
Yields: 6 triangles

Ingredients:
3-4tblsp Mango Chutney
1 Honey Crisp Apple, sliced
8oz Goat Cheese, softened
1 loaf Brioche Bread

Directions:
Spread goat cheese over the bread and then add a layer of the mango chutney. Followed by apple slices. Add another piece of bread over top.
With a sharp knife, cut off the crust and then cut into triangles.

Day 5 of National Afternoon Tea Week🫖

Today we are having Creamy Cinnamon Orange Finger Sandwiches & Darjeeling

Known as the “Champagne of Teas,” Darjeelings bright, Muscatel grape profiles and subtle astringency balance the sweet brown sugar and fragrant cinnamon spices cleanly without overpowering the citrus elements.

Recipe:
Yield: 12-16 triangles

Ingredients:
8 oz cream cheese, softened
1/2cup mandarin orange segments, thoroughly drained
1tbsp light brown sugar
1/4cup pecans, finely chopped
1 loaf cinnamon swirl bread

Directions:
In a medium mixing bowl, combine cream cheese, brown sugar, and chopped pecans. Gently fold in the mandarin orange segments, lightly mashing them to release flavor while keeping texture.
Spread the textured orange filling evenly onto half of the cinnamon swirl bread slices, then top with the remaining slices.
Use a sharp serrated knife to neatly trim away the crusts. Slice diagonally into triangles or into slender rectangles.

Day 4 of National Afternoon Tea Week 🫖

Today we are having Savory Curry-Butter Radish Cucumber Rounds & Jasmine D**g Ting Bi Luo Chun

The intensely floral aroma and clean, grassy finish of jasmine green tea lift the heavy, warm spices of the curry butter while beautifully highlighting the crisp, peppery bite of the fresh radishes.

Recipe:
Yield: 16 open-faced rounds

Ingredients:
3/4 cup unsalted whipped butter, room temperature
2tsp mild yellow curry powder
1/2tsp salt
2 Persian cucumbers, sliced into paper-thin rounds
6 red radishes, sliced into paper-thin rounds
1 loaf pumpernickel bread, cut into small rounds

Directions:
In a bowl, vigorously mix the whipped butter, curry powder, and salt until completely uniform and aromatically fragrant.
Spread a generous tablespoon of the golden curry-spiced butter flat across each piece of bread right to the outer edges to create a moisture barrier.
Alternately shingle overlapping layers of the crisp radish and cool cucumber rounds over the spiced butter base.
Sprinkle a tiny pinch of sea salt over the top right before setting them out on your tiered serving display.

Day 3 of National Afternoon Tea Week🫖

Today we are having Prosciutto Apple Brie Crostini with Sage Butter & Lapsang Souchong Black Tea

The bold, pine-smoked notes of this black tea beautifully cut through the creamy, buttery richness of the Brie while echoing the savory depth of the cured prosciutto.

Recipe:

Yield: 12-15 servings

Ingredients:
1 baguette, sliced into 1/2-inch rounds
4tbsp unsalted butter, softened
5 fresh sage leaves, finely chopped
6oz Brie cheese, sliced
4oz prosciutto slices
1 crisp Honeycrisp apple, thinly sliced
Arugula for garnish

Directions:
Arrange baguette slices on a baking sheet. Lightly toast at 375°F for 6–8 minutes until crisp but pale. Let cool.
Thoroughly mix the softened butter and finely chopped sage leaves in a small bowl.
Spread a thin layer of the savory sage butter over each cooled toasted baguette round.
Layer a slice of rich Brie, a fold of savory prosciutto, and a crisp apple slice. Top with a leaf or two of fresh arugula.
