Strawberry Cheesecake Eggrolls
In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold in the diced strawberries until evenly mixed.
Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you.
Spoon a small amount of the strawberry cheesecake filling into the center of the wrapper.
Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water.
Heat vegetable oil in a pan to about 350°F (175°C).
Fry the eggrolls for 2–3 minutes, turning occasionally, until they are golden brown and crispy.
Remove and place on paper towels to drain excess oil.
Dust with powdered sugar or drizzle with strawberry sauce before serving.
