Fresh cream butter made using my mixer and cold fresh cream.

Recipe:

Heavy cream. I used 5 cups and yielded 1 pound of butter.

Mix on low or a speed that doesn't splash when you beat the cream. I used a paddle attachment on my kitchenAid mixer. I upped the speed as the mixture thickened. Mix until the cream coagulates and combines together to look and have the texture of smooth butter. It will come together and a thin watery substance will be left in the bowl. Wash under COLD water pushing the butter around until the water is clear. Squeeze out as much of the water as possible. Form into the size you want it, freeze or store in refrigerator. Optional salt to taste.
