🍫 Behind the Scenes at Rainy Day Chocolate: Tempering!
Ever wonder how chocolate gets that beautiful shine and satisfying SNAP when you break it?
That’s where tempering comes in.
Tempering is the process of carefully heating, cooling, and working chocolate to encourage the cocoa butter to form just the right crystal structure. Get it right, and you end up with chocolate that’s glossy, smooth, melts beautifully in your mouth, and has that wonderful crisp snap.
And yes… chocolate can be a little temperamental. 😉 A few degrees can make a surprisingly big difference!
Here at the factory, tempering is part of our everyday rhythm. Before chocolate becomes bars, truffles, dipped Oreos, marshmallows, toffee, and all sorts of other treats, we need to make sure it's ready to behave.
It's a little bit of science, a little bit of art, and a whole lot of chocolate. ❤️
