I think everyone is experiencing some petty cold weather! How about some soup recipes today? Y'all share!!! Here's one from me. Been making this a long time. It's a staple. And I have people (that don't save the recipe 😝) wanting me to give it to them all the time! ....

CHICKEN TORTILLA SOUP (crockpot)

4 boneless chicken breast (frozen or thawed)
2 -15oz.cans Black beans,Undrained
2 -15oz.cans Mexican stewed tomatoes,
or Rotel tomatoes
1c. salsa
1-4oz. can chopped green chilies
1-14 1/2 oz. can tomato sauce
tortilla chips
2c. grated cheese

Combine all ingr. except chips & cheese
In slower cooker.Cover.Cook on low 8 hours.
Just before serving remove chicken & slice into bite-sized pieces.
Stir into soup.Ladle. Top with chips and cheese.

*i always use frozen chicken unless I just happen to have some thawed. That's the beauty of this recipe! So so easy!

Pecan Bites

1 c. brown sugar, packed
1/2 c. all purpose flour
1 c. chopped pecans
2/3 c. melted butter
2 eggs, beaten

combine sugar, flour, and pecans; set aside. Blend together butter and eggs; mix into flour mixture. Grease mini muffin pans and fill. Bake @ *350 for 22 to 25 min. (only takes about 15 in my oven, so just check them).

*these taste like pecan pie in mini muffin form!!! Delish!

COWBOY CAVIAR

- 1 can Diced tomatoes, undrained
- 1 can black eyed peas, drained and rinsed
- 1 can black beans drained & rinsed
- 1 can corn, drained
- 1 small red onion or half of a bigger onion, diced finely
- fresh chopped cilantro (however much you like)
- 8 oz. bottle of zesty Italian Dressing (*i buy the pkg with no msg, think it's good seasons brand, and make it myself. I also add more vinegar bc we like it really tangy.)

Mix all together, refrigerate at least 3 hours (the longer it sets, the better it gets, so this is a perfect make-ahead recipe). Serve with tortilla chips (the scooping kind are the best).

*i also use all organic canned veggies. I shop at kroger 90% of the time. So I buy the Simple Truth brand. Only issue with that I have is they don't have Simple Truth black eyed peas. I've only been able to find them at whole foods. But I have bought frozen black eyed peas, cooked them and used those. Obviously that takes longer for this very simple recipe. But I personally don't want to use the peas with all sort of ingredients added to it. Also, I use a mini food processor and do my cilantro and onions together to chop finely. In my experience, it's hard to chop cilantro in a mini food processor if it's just cilantro in there.

First recipe up... I tried the Lemon Blueberry Bread I've been seeing on my newsfeed. And let me just say "omg this is awesome and I'll be making this again" 😉😀 I won't always post pics but I went ahead and did today. So here you go. (recipe to follow in comments)

Ok so I decided to start a page for us to share our recipes! But my mindset was for us to share tried & true recipes. If you're like me you've wasted some time and effort (and money!) on a recipe or two in your life. Let's be honest, I love finding recipes and I find a lot on Pinterest. They make it sound easy. The picture looks fabulous. But when you were finished with it, it tasted like crap! Anyone who knows me knows how l like cooking and trying new things. When I find a recipe that I put in my "omg that was awesome... I'll be making this again" pile, I LOVE to pass it on to my friends! So here's a page for us to share them. But please, share recipes you've actually tried. That way you can share your tips or adjustments and people can ask questions about the recipe. So c'mon lets share some recipes.
