I am not the sort to be stuck up on knives.The one in my kitchen I use the most is available at the local store for under $20.00
However I do think that a knife should be kept as sharp as the steel allows it to be. I have worked 25 years as a cook and have a working knowlege of all sort of knives and brands.I also am a student of the Japanese sword for at least as many years.This combination has
given me the skills to bring out the best that your steel can give you. Please bring by your Victorinox,Wusthof,Henkels and Shun knives and let me give them the edge they deserve...or bring in the cheapest knife you can find and watch it shave hair when I am done. I test each blade I sharpen and in the last 3 years at the market I have not one unhappy customer. I charge $3.00 for a knife under 10'' and all blades on a pocket knife are incuded at this price. You may stand and watch me work or shop the market and pick up your knives when you are ready...and then you look to the sky for a Giant Yellow Rubber Ducky!! That is the easy way to find my booth...look for the Duck
