Nothing like homemade basil flower infused peach tea on a hot day! 🌿 🍑

-Put 8 packets of Celestial Seasonings Country Peach tea packets in a big mason jar. Add a Handful of basil flowers. (You can use basil leaves if that’s all you have on hand! If you use leaves, be sure to massage them a little to help the oils release.)
-Add 2 tablespoons of brown coconut sugar and 1 tablespoon of honey.
-Cover with hot water ( about 16 oz)
-Steep for 3-4 mins.
-Stir.
-Fill a pitcher with ice.
-put a strainer over your pitcher and pour hot liquid through strainer.
-Add cold water to reach desired strength of tea. (I like mine pretty strong, and only ended up adding water until the pitcher was 2/3 full! You might want to add more water.
-Add a few basil leaves for garnish and Enjoy! 🌿
*note-this is a very floral not overly sweet tea. You can absolutely add sugar or stevia for a sweeter tea! I was going for a lower glycemic index item that was satiating and delish. It definitely met the need!

It is with deep sadness that we share with you all the passing of three of our beloved chickens, Marilyn Monroe, Mary Queen of Scots (Bottom chicken in second photo, and Big Bertha (Bottom chicken in third photo). They were attacked by a fox today in two separate incidents. Two chicken funerals later, we have a lot to reflect on.
We are so grateful to our incredible farm cat, Meow Meow, for scaring the fox away both times before it could get more of our chickens!
Hobby farm life can be incredibly rewarding but also deeply painful. To love people or creatures means to, at some point, grieve the loss of that love. We are grateful to have loved them well.

Starting this snow day right! ❄️
With cinnamon streusel muffins. (These are gluten free with a dash of added protein!) 😍

I used King Arthur’s gluten free muffin mix.
Added 1/2 tsp organic Saigon cinnamon, 1 cup apple sauce and about 2.5 oz Orgain collagen peptides + probiotics.

For the streusel I added roughly 4 TBS Irish butter, 1/4 cup organic old fashioned rolled oats, 1/4 TBS cinnamon, 1/4 TBS all spice, and 3 TBS sugar. Cut butter into mixture until pea sized crumbles form.

Place muffin batter in muffin tin (I recommend using paper muffins cups or silicone for this recipe instead of greasing pan)
Add streusel on top.
Cook approx 20 mins.

While cooking, I combined 1 TBS of A2 whole milk and 1/4 cup of powdered sugar. Whisk well and drizzle on top of muffins when they come out of the oven.
(I kept it simple this time, but you can add vanilla exact, almond extract, or a dash of nutmeg to make the drizzle sing! 🎶

Enjoy with a cup of earl grey or glass of cold milk. 😊
