Our first round of subscriptions! We are so excited for you to try them! You will be receiving two Colombian coffees with the help of and , both from finca La Riviera—a well-known farm that specializes in exotic varieties. One coffee will be a bright washed Pink Bourbon, and the other is a Sudan Rune varietal (fancy!) that is naturally processed and very fruity.

Things are changing for us, and we have some big news to share. Starting today, Green & Orange Coffee will be known as 6:am Coffee, focusing solely on coffee roasting and our relationship with producers, importers, and the coffee industry as a whole.

Why?
Well, and I will be moving back to Durango, Colorado, so I can return to school full time. It will be a busy few years, but coffee will remain the deepest of my passions. Upon making this decision months ago, I made myself reevaluate what I truly enjoy about being in coffee. The answer became crystal clear, quite quickly. The experimentation of roasting, the innovation of producing, the learning, the new, the unique and rare, the first taste of a new coffee are all highlights of things that get me excited. So not only will I continue to roast new and exciting coffees under the 6:am Coffee name, but I want to share the coffees and experiences that I truly love about this industry. One of the best parts about my daily routine—no matter where I am in life—is waking up around 6:00am and making coffee, usually a pour over and usually something new. It's not just the caffeine that gets me going; it's the experience: the aromas, taste, exciting flavors, and routine. Then, the satisfaction of knowing exactly what that coffee has gone through to get into my cup is the final sprinkle.

6:am Coffee will mainly be a subscription-based roaster. You choose the size of the bag, and we will ship you two different coffees every month—two coffees that I love, find unique, and want to drink every morning. I plan to offer some of the craziest and most outstanding coffee I can get a hold of (possibly a coffee from California; bet you didn't know that was a thing!). Passion fruit flavored espresso 🤤

Say hello to our latest coffee: a passion fruit co-ferment from Finca Milan in Colombia. For those new to the term co-ferment, this coffee was anaerobically fermented with 2 varieties of fresh passion fruit, passion flower, and specific yeasts to aid in fermentation. The raw coffee consumes the juices, sugar, and the delicious sweet-tart flavors from the passion fruit, and the final cup actually tastes like passion fruit.

Since the coffee is so intensely sweet, we find it to be one of the most quenching espressos we have ever tasted. You definitely won't lose anything in a normal pour over or drip brew, either. If you have never tasted co-fermented coffee, this is your chance!

We need to talk about something very important...

Coffee production is in a steady and rapid decline, and it has been for 20+ years. But especially lately, premium coffees that require meticulous climates and environments to grow are being threatened by many factors such as climate change. For example, Tim Wendelboe recently spoke with export experts in Kenya that noted that Kenyan specialty coffee is down roughly 100% from what it used to be 20 years ago. Though combatting climate change is a massive topic that I am unable to discuss, there is another factor that is undeniably important to be educated about.

AGROFORESTRY is an ESSENTIAL component to the future of coffee production. What exactly is agroforestry? Agroforestry has many levels and complexions, but most recent to coffee is a full implementation of agroforestry. A fully forested and diverse farm is going to have many species of edible crops (like avocados, almonds, berries, and other cash crops), native tree and plant species to provide shade and environmental stability, livestock to graze specific plants and provide for farmers and the ecosystem alike, and finally consumable species (like fast-growing trees for firewood, medicinal plants, biofuels). Not only will this system better provide the farmer, employees and family with more income all year round, but there are HUGE ecological benefits to agroforestry. Specific to coffee, the trees perform better when grown in shade, not only in quality, but often in quality, too. Sun-grown coffee trees have a shorter life; cherries can be damaged by the sun, and the fruit doesn't get as much time to ripen. The sun-grown trees also end up over-producing which can exhaust the plant, resulting in worse yield. Speaking toward quality, shade-grown coffee is substantial to sun grown coffee. The soil is often more alive and unique to the location and micro climate, and the native shade trees and other plants add to the unique growing conditions. Coffee trees often live longer and grow stronger, which can reduce or eliminate the need for chemical fertilizer and fungicides. YEAST fermented Ethiopian 🌸🍉🥛

Our first Ethiopian coffee drop is from the Bonde Washing Station that processes over 800 small producers in Ethiopia. Normal to this region is a good old fashion sun-dried natural, but this rare washed processed coffee was fermented with yeast. However, you won't taste any bread in this coffee, just more intense florals with refreshing hints of papaya, lime, watermelon, and a dominating creaminess similar to a quality oat milk. The body is light, tea-like as some say, which is what I prefer as the spring weather begins to roll in.

Chocolate fudge, cherry, and Christmas cheer is available to purchase today!

All the way from Colombia is this anaerobic natural that—like many of our coffees—may surprise you by its taste in relation to its process. La Aurora is a farm that produces mostly naturals at a staggering 2000masl (that's almost 7k feet!), and despite the longer 72hr fermentation time, this coffee is fudge-y, toasty, with hints of dark fruits, and a bit of candy-like juiciness. The slow fermentation is definitely prevalent in the full/heavy texture, however. Personally, this is a coffee I could share with anyone, from Folgers drinkers to complete coffee snob, that's why it is the perfect holiday coffee (and perfect holiday gift 😉)!
