Just like that the 2025 maple season is over. Just finished up the last 40 gallons to make the last 3 jars of the year. It was a pretty good year, we collected roughly 560 gallons of sap to make just under 6 gallons of syrup. Thanks to everyone who helped us support the hobby, and for those repeat customers also. Now just to clean it all up and wait for next year.

More fresh syrup from the sugar shack. We had a good week collecting 203 gallons of sap, they boiled down to 2.25 gallons of syrup. Looking at the weather for the week, it looks like this season is wrapping up, there are no more nights below freezing and that will put an end to it for this year. Hoping to sneak in more boil in Monday, and that will be a wrap on the season. I have lots still available, so message me or comment with any orders.

Fresh syrup from the shack!
Had a pretty good week, collected 185 gallons of sap and it boiled down to 2.375 gallons of amber syrup. Almost lived up to the name, filled the last bottle at 11:30 last night, took 15 hrs from lighting up the fire. Second pic is comparing from 2 weeks ago to yesterday's. Definitely getting darker, normal as the season moves on. This upcoming week looks very good also hoping to break 2 more gallons. If you have orders shoot me a message to pick them up. And I have a lot left so get it before it's gone.

1st batch of 2025 complete, right about 7/8 of a gallon of very light amber syrup. I think this early stuff has a light caramel hint to it, delicious. This is from 60 gallons of sap. It's been a tough start to the season, and it's looking like old man winter is back for this week so hoping for warmer temps the following week to make some more.

Spent the day in the woods, fixed over 300ft of bad tubing the squirrels decided to chew on, then put 41 taps in. Should have some sap tomorrow, looks like a good day, and a decent week overall. Fresh syrup next weekend.

Last syrup of the season. Only got 60 gallons of sap to make into just under 5/8 of a gallon of syrup. We collected 260 gallons of sap this year. Just for reference, last year was a record year and we collected 740 gallons. The weather this year was just far from ideal and the season was a short one. I'll be putting this stuff on my pancakes and waffles for the rest of the year, so we are sold out. Thanks to everyone who purchased and hopefully next year will be a better one.

Mid week boil in the shack. With the warm temps, sap goes bad way faster so needed to make some sweet steam. We can boil roughly 12 gallons an hour, about 50 gallons to get through tonight. With the upcoming temperatures next week, mother nature is setting our last boil for Saturday. Quickest year we have ever had, but that's one thing you can't change.

3rd week of the maple season from the sugar shack. Ended the week with 74 gal of sap and turned that into 7/8 of a gallon of syrup. Temptures this year are really not cooperating. We had that big cold snap last week and it looks like this week will be very warm. Expecting this week to be better than last week but not like it should be this time of year. Hoping to get 2-3 more weeks until mother nature shuts us down for the year.

With this week's weather, we have not gotten enough sap to boil, so sadly no fresh syrup today. However, we did jet a new label design in, a little simpler than the last. Next week's temperatures look much better for sap production so should have at least another gallon in a week. Thanks for buying local.

First syrup of 2024, 123 gallons of sap down to 1.4 gallons of nice light amber syrup. A little info about the different grades of syrup. Generally the early season is a much lighter color from less bacteria in the sap,as temperatures warm, the trees sap will naturally change and more bacteria will form from the warmer temperatures. It's a natural cycle and not harmful.The syrup is still boiled to the same viscosity and not "watered down", that's a common misconception. As the season moves along it generally will get darker. It also changes the flavor, I generally like the later syrup, in my opinion it has almost a Carmel hint to it, but also like this earlier stuff too.i'll get some labels on them tomorrow, but love the color of this lighter stuff. Next week's temps don't look very good for sap production, so there might be a very light boil, if anything at all. Thanks to everyone who purchased from us last year and hope to see you back as well as others.
