First syrup of 2024, 123 gallons of sap down to 1.4 gallons of nice light amber syrup. A little info about the different grades of syrup. Generally the early season is a much lighter color from less bacteria in the sap,as temperatures warm, the trees sap will naturally change and more bacteria will form from the warmer temperatures. It's a natural cycle and not harmful.The syrup is still boiled to the same viscosity and not "watered down", that's a common misconception. As the season moves along it generally will get darker. It also changes the flavor, I generally like the later syrup, in my opinion it has almost a Carmel hint to it, but also like this earlier stuff too.i'll get some labels on them tomorrow, but love the color of this lighter stuff. Next week's temps don't look very good for sap production, so there might be a very light boil, if anything at all.
