Bluestem Coffee Roasting Company is a small batch specialty coffee roasting company established in 2024. Matt Knott, the master roaster, learned the artistry of coffee roasting with North Pole Coffee in Alaska in the late 90s. He went on to start up Minnesota Coffee Roasting Company in 2006 and was on the board of the Midwest Roasters Guild. He moved to Iowa in 2008 as a single dad to provide for

his daughter and to eventually meet his wife, Casey Knott (a mom, poet, believer in finding what you do well in life and sharing that artistry). His passion for roasting coffee has never diminished, so he and his wife have meticulously created a new roasting company to provide well-crafted single origin and fine blend coffees meant to not only provide a quality product to those that know its potential, but to show coffee connoisseurs what a quality cup of coffee means. Roasting coffee beans is one part science and one part art and we look forward to showcasing our distinct convergence of this beloved commodity.

New Limited Release: Papua New Guinea Arufa Natural AX

We’re excited to add a new coffee to the Bluestem lineup — a naturally processed coffee from the Arufa area of Jiwaka Province, Papua New Guinea.

This one is beautifully expressive, with notes of raspberry, vanilla, toasted sesame, and brown sugar. It has that sweet, fruit-forward character we love in a natural process coffee, but with a smooth, grounded finish that keeps it very drinkable.

Roasted light to light-medium to bring out the fruit, sweetness, and complexity without losing balance.

Available now in limited quantity.

Our Kenya AB is now available in 12 or 16 oz bags.

This is a light-medium roast with a clean, structured cup and classic Kenyan character. Look for notes of black current, soft lemon brightness, black tea, molasses, and a dark chocolate finish.

It’s a great choice for anyone who enjoys a coffee with brightness, depth, and a little more complexity in the cup.
