Ever watched fudge actually get made? Not the finished product. The whole thing, from raw sugar to the tray.

This is what Mondays look like at our shop. Sugar going into the copper kettle. Josh hand-stirring batch after batch, slowly, until the texture is exactly right. Then the pour into trays where it sets into the smooth, creamy chocolate fudge our customers keep coming back for.

Jen, who buys two pounds at a time, told us why: "My 16 year old daughter loves fudge. But she's very particular. She doesn't love all fudge. What she does love is Stage Stop chocolate fudge. She loves it so much that we always buy two pounds at a time."

THE GIFT YOU DIDN'T KNOW YOU NEEDED UNTIL RIGHT NOW.

You know the feeling. The bridal shower is Saturday. The beach house weekend is coming up. Your mother-in-law is hosting again and you can't show up empty-handed. You want something thoughtful, something pretty, something that doesn't look like you grabbed it at the last minute.

THE LITTLE GIFT THAT MAKES RECITAL DAY HER DAY.

Eight months of Saturday mornings. Costume fittings. The drive home with the car radio on her playlist. And then she walks out under the lights and you forget how to breathe.

In December, our peppermint depositor died.

Josh switched to the backup, our Friend press. It's a vintage piece that's not manufactured anymore, and ours is still running.

Here's the thing. The depositor heated the cream to a liquid and dropped flat discs. The Friend press works differently. First, our cream be**er works the peppermint for 30 minutes. Three large paddles align every sugar crystal until the texture is completely smooth. Josh calls it "aligning, not mixing." Then the Friend press takes that prepared cream, firm and cool, and a wire slices each piece to exact height as it presses through. The result is a dome instead of a disc.

Same recipe. Same dark chocolate from the enrober. After they're dipped, the pieces rest 7 to 10 days, and the centers soften back to that melt-in-your-mouth bite our regulars know.

Honest take from us in the shop: the Friend press makes them better.
