This light, protein-packed salad is perfect for warm summer days and makes a great lunch or dinner.

Ingredients

For the Salad:

* 4 cups mixed greens (spring mix or spinach)
* 1 grilled chicken breast, sliced
* 1 cup fresh strawberries, sliced
* ½ cup blueberries
* ¼ cup crumbled feta cheese
* ¼ cup sliced almonds or pecans
* ¼ cucumber, sliced
* ¼ red onion, thinly sliced

For the Dressing:

* 2 tablespoons olive oil
* 1 tablespoon balsamic vinegar
* 1 teaspoon honey
* Salt and pepper to taste

Instructions

Fresh, colorful, and perfect for cookouts, pool days, or easy lunches!

Ingredients:
• 12 oz rotini pasta
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 bell pepper, diced
• 1/2 red onion, thinly sliced
• 1 cup mozzarella pearls or cubed cheese
• 1/2 cup black olives
• 1/4 cup fresh parsley or basil, chopped

Dressing:
• 1/3 cup olive oil
• 3 tablespoons red wine vinegar
• 1 teaspoon Italian seasoning
• 1 teaspoon garlic powder
• Salt & pepper to taste

Instructions:

1. Cook pasta according to package directions. Drain and rinse with cold water.
2. In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, onion, cheese, olives, and herbs.
3. Whisk together dressing ingredients and pour over salad.
4. Toss well and refrigerate for at least 30 minutes before serving.

Smoked Gouda Mac & Cheese 🧀

Creamy, cheesy, and packed with rich smoky flavor, this comfort food favorite is next-level delicious!

Ingredients:
• 16 oz elbow macaroni
• 4 tablespoons butter
• 4 tablespoons flour
• 3 cups milk
• 1 cup heavy cream
• 2 cups shredded smoked gouda cheese
• 2 cups sharp cheddar cheese
• 1/2 teaspoon garlic powder
• 1/2 teaspoon smoked paprika
• Salt & pepper to taste
• 1 cup panko breadcrumbs
• 2 tablespoons melted butter

Instructions:

1. Cook macaroni according to package directions. Drain and set aside.
2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
3. Slowly whisk in milk and heavy cream until smooth. Simmer until thickened.
4. Stir in smoked gouda, cheddar, garlic powder, smoked paprika, salt, and pepper until melted and creamy.
5. Add cooked pasta and stir to coat evenly.
6. Pour into a greased baking dish. Mix breadcrumbs with melted butter and sprinkle on top.
7. Bake at 375°F for 20–25 minutes until bubbly and golden brown.
