Picking for hours after work is losing its lustre and one of many reasons this is my last year doing this. I've been asked for years why I never post pictures of myself on the farm, making sauce/products, etc. Well it was never about me. This was all to honor our buddy Boda and spread his image and story. I'm putting up one pic just because it is pretty much the first and last just for sh*ts n giggles. Mostly giggles.

This is our pickle powder in its infancy. We started with our amazing ferment ratio brine and add a huge pile of fresh picked dill flower. Toss in a ton of fresh picked tender young cukes, an air trap and wait a few weeks. We then take all that amazing dill flower and drain it of excess liquid. Place all those now amazing zippy, salty, spicy, dilly fermented pickles on the dehydrator and add the drained dill flower to the top. Set the temp, time and walk away. What will follow is severely unimpressive. 25-30 cucumbers dehydrate into about 2-3 cucumbers worth of powder. This stuff is worse than saffron.

Prepped a few trays of some HUGE poppers with our megatron jalapeños!!! We like to mix in a bit of ranch seasoning, smokey jalapeño hot sauce and cream cheese for the filling. Toss in the freezer then pop off the tray and in to bags. We found by freezing them, the bacon crisps perfectly, cream cheese doesn't bubble out and the pepper has the perfect bite after cooking on a pizazz. Yes that is a regular cookie sheet. Some of those are 7" long!!!
