Most wine cellar problems don't start with bad construction. They start with construction that began before the planning was actually finished. Solid planning up front is what makes the rest of the project forgiving, regardless of which spec you end up building to.
The variance you can't recover from is the variance no one knew about.

A wine cellar can be built successfully to many different construction specifications. R-values, v***r barriers, wall assemblies, door types. There isn't one rigid path. What matters is that whoever runs the load calculation for the cooling system knows exactly what they're working with.

The cooling system isn't generic. It's sized and configured based on the thermal envelope you actually built. If the load calc assumes R19 walls and the walls came in at R11, the equipment will be undersized and the cellar will struggle to hold conditions. Not because the build was wrong, but because the calculation was built on bad inputs.
That's why the planning conversation must happen first, and the construction details must pass cleanly to whoever runs the load calculation.
