Gotta say, I've been really impressed with the cold-smoked sushi-grade Atlantic salmon from Saint; we've started out with their Limoncello-infused version and have reordered frequently.

They are part of the womed-owned St James Smokehouse company, located in Miami. I was introduced to them by my rep from Fortune Fish and Gourmet, our primary gourmet foods distributor.

Pair it with fresh bread and cheeses as a part of your cheese and charcuterie platter, or top a leafy green salad for an easy, light summertime meal. Or, if you could find a decent bagel in this community, it'd be a match made in heaven!

You'll find them in our grab-and-go cooler towards the back of our western expansion. If we can figure out how to make additional refrigerated shelf space, I'd like to add additional flavors. How does a black truffle-infused version sound?

We've just done a massive restock of cutting and serving boards from Teakhaus. These boards are gorgeous, functional and durable.

Teakhaus is one of our charter vendors, on our shelves since day one. We couldn't be more happy with the deep relationship we have with this vendor.

To keep your boards vibrant, we suggest using their board conditioning oil, which keeps the boards moisturized and the colors of the wood vibrant.

The most exciting news of the day? Isigny Ste Mere's magnificent French butter with sea salt crystals is back in stock. *Finally.*

After multiple requests for this butter, we found a source that would distribute it to us in our part of the state. After getting our first shipment in mid-April, we sold out completely in four days; when I went to reorder, it was out of stock and remained out of stock for four full months despite weekly attempts at reorders.

My most recent attempt was successful and I ordered a LOT -- 15 cases to be specific.

I can't guess how long this shipment will last but if initial demand in April repeats itself now, it'll sell quickly.

With its crunchy sea salt crystals, this butter is best generously slathered on fresh, crusty bread or used as a base for your butter boards. To use it in cooking, sauteeing or baking will dissolve the salt. To preserve the crystals, my recommendation is to keep it stored in the fridge rather than leaving it on the countertop.

Also in stock from Isigny Ste Mere? Their unsalted butter and their whipped cream, both spectacular.

Cocktails for the weekend (AKA how to shop the state's smallest liquor store): This weekend, we're sipping an Aviation, a cocktail I was introduced to by lake neighbors during a card party several years ago; I was hooked and made them frequently for several years until my focus went elsewhere (hello, Negroni).

The Aviation is a unique drink -- a strong juniper-forward gin base, modified by both fruity/bitter and floral liqueurs and balanced by tart lemon. The fruity/bitter note comes courtesy of Luxardo Maraschino Liqueur and the floral note come from the gorgeous Creme de Violette Liqueur (don't overdo the Creme de Violette because too much will remind you of potpourri.)

This is a classic cocktail, first developed at the turn of the last century and was popular for decades ... until Creme de Violette stopped being imported to the United States in the 1960s. Once the liqueur was unavailable, the cocktail disappeared entirely.

In the mid-aughts, a Minneapolis-based importer brought back Creme de Violette to the United States and suddenly the drink reappeared in progressive cocktail lounges. Currently, there are several makers of this fine liqueur; our version comes from France.

2 oz Sipsmith London Dry Gin
0.5 oz Luxardo Maraschino Liqueur
0.25 oz Giffard Creme de Violette
0.75 oz freshly squeezed lemon juice
Garnish: Luxardo brandied cherry

In a cocktail shaker over ice, add all ingredients except garnish and shake until chilled. Strain into a Nick & Nora glass and garnish with a brandied cherry.

Nectar Republic is one of our charter vendors, on our shelves from day one. One of the most successful parts of their lineup is their 1776 apothecary candles, purposely a bit more masculine in appearance and fragrance with scents called West Point, Gunpowder and Leather, et al.

What most of you won't remember is that Nectar Republic also offered the same six scents in room sprays, which were also wildly popular. Those sprays were one of the first supply chain casualties during the pandemic when Nectar Republic wasn't able to source their glass bottles. As our stock dwindled to nothing in 2020, I personally brought all of the sample bottles home and ever since then I've been able to spritz and spray our bed linens and have kept our whole house smelling fresh.

I've secretly held out hope that they would reissue those sprays. Years went by without any hint of them returning. Then, this past month, I went to their website to reorder candles and, *finally,* their Aroma Sprays were once again available. Of course I ordered!

I've just unpacked them and you'll find them at the front of our western expansion, along with other home fragrance items. I can't believe they're on our shelves again!

Today is a bit of a sad day as we say goodbye to Tim, one of our longest-tenured employees, as he's joining his spouse to live in Bemidji.

Tim joined us when he was quite young; I think he was 15 but he claims he was 16. He started out scooping ice cream at the dipping cabinet but quickly showed an interest in the cheese counter.

At the time, I thought he was too young to speak with authority and knowledge about cheeses, fearful that customers might not trust someone so young. He would study cheeses at home at night and come into the store for his next shift and tell me all he had learned. He quickly proved himself to me.

Leading up to his 21st birthday, he undertook a similar path of learning about wines and spirits, asking us (or customers) to taste various spirits, and have us relay tasting notes and opinions. He studied cocktails and cocktail culture and even made his own bitters and syrups. Customers relied on him despite not having personally tasted anything.

Quite frankly, his knowledge on our products often surpassed my own, and I couldn't have been more proud.

Never in a million years could I fault him for wanting to live with his spouse, but I will miss him terribly, as will the rest of our team and our customers.

We wish him well in his new life and if they ever move back to the Crosby area, there's always an opening in our schedules.

Thanks, Tim, for many good years of service. I'll miss you most of all. Deeply.

Last night, Paul and I had company over for cocktails on the pontoon followed by dinner; it was a rare bit of summertime entertaining for us -- something that pre-Victual used to occur with much greater frequency.

As a part of our dinner, we made a leafy green salad and dressed it with something brand new -- Terrapin Ridge Farm's Strawberry Poppyseed Dressing, made with avocado oil rather than seed oils. Boy, was it a hit with the whole group!

We chose a lettuce mix with spinach, and crumbled goat cheese overtop. You could add fresh sliced strawberries, caramelized pecans, slivers of red onion and some croutons. Relish!

You'll find Terrapin Ridge's salad dressings towards the back of our western expansion, along with an amazing selection of gourmet foods. The Strawberry Poppyseed dressing is in a squeeze bottle so you can control how much goes on your salad, whether a little or a lot.

Non-seed oil foods are growing in popularity and I'm sure we'll be seeing more and more options from a variety of producers.

I don't know if it's possible to make an ice cream any better than BLUEBERRY BETTY.  Wow, is it good!  Real wild blueber...

I don't know if it's possible to make an ice cream any better than BLUEBERRY BETTY. Wow, is it good! Real wild blueberries and English Toffee Cookies sourced from our neighborhood SuperOne grocery store.

If this is your flavor, you'd better get here quickly because blueberry season is short!

Like all of our ice creams, this one is full dairy that's lactose free, made on-site using all natural ingredients and colors.

I'd like to give a shout-out to Brody, who has done an amazing job keeping up with ice cream demand this summer. His work ethic is terrific and his ice cream making skills are top notch. Brody started as an ice cream scooper and asked to make ice cream. I'm super glad he asked for the additional responsibility!

Ooh la la Lavandula!!!

We've introduced a new cheese -- it's Lavandula produced by the Koch Dairy, a family business in Switzerland's Appenzell region. The son of the founder has developed this cheese, taking a traditional mountain-style raw milk cheese and taking it in an entirely new and modern direction by coating the edible rind with lavender and thyme.

The added herbs give it an herbal/forest floor/balmy sweet flavor note, which is excellent against the nutty background. It's aged for 90 days, giving it a firm texture that remains smooth and creamy.

Pair it with crisp white wines (sparking is great) or fruity reds. Fresh apples, pears and figs are a natural, along with crusty bread or rustic crackers. And, of course, honey, marcona almonds and any cured meat are all great.

We're offering samples! Stop by the cheese counter today!

Oh, and for those of you craving Red Witch (also from Switzerland), we got a surprising delivery of a new wheel yesterday afternoon! Come and get it!
