Good fermentation can't be rushed. 💛

While live bacterial counts actually peak much earlier, we choose to let our kraut ferment for **4–6 months** because that's when some of the most incredible transformations happen.

Over time, fermentation continues to:
✨ Build beneficial postbiotics
✨ Break down antinutrients to make minerals more available
✨ Create a deeper, richer umami flavor
✨ Make the cabbage even easier to digest

It's a slower approach, but we believe time is one of the most important ingredients in truly exceptional fermented food.

Crunchy dilly beans. Tangy kraut. Spicy jalapeño carrots. A cold swig of beet kvass. Kimchi on literally everything.

Our ferments were basically made for a blanket in the sun — grab a jar (or five), find some shade, and eat well out there.

Our favorite part of market day? Honestly, we can't pick just one. 🫙

But one thing we love is the energy. The regulars stopping by, neighbors catching up, meeting new faces. There's nothing quite like a summer farmers market and we're so grateful to be part of it.

🥕 CNY Regional Market: Find us year-round in the C Shed every Saturday, 7am-1pm
🥒 Ithaca Farmers Market: We’re in Stall 23 on Saturdays from 9am-3pm and Sundays from 10am-3pm in May thru November
