Cilantro Lime Chicken Salad with Mango Avocado Salsa
Ingredients:
For the Chicken:
2 large boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper, to taste
Juice of 1 lime
Zest of 1 lime
2 tablespoons chopped fresh cilantro
For the Mango Avocado Salsa:
1 large mango, diced
1 large avocado, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper, to taste
For the Salad:
Mixed salad greens
Cherry tomatoes, halved
Red onion, thinly sliced
Optional toppings: sliced jalapeรฑos, tortilla strips
Directions:
In a small bowl, whisk together olive oil, minced garlic, cumin, paprika, salt, pepper, lime juice, lime zest, and chopped cilantro. Pour over chicken breasts and let marinate for at least 30 minutes.
Preheat grill or grill pan over medium-high heat. Grill chicken for 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from heat and let rest for 5 minutes before slicing.
In a medium bowl, combine diced mango, diced avocado, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Stir gently to combine.
To assemble the salad, arrange mixed salad greens on a serving platter. Top with sliced grilled chicken, cherry tomatoes, red onion slices, and mango avocado salsa. Garnish with optional toppings if desired.
Serve immediately and enjoy!
