Rhubarb pudding cake has a delicate sugar crust, and rich pudding bottom. It's easy to make using fresh or frozen rhubarb, and can also be made gluten free.

Here is an awesome rhubarb recipe to try! Garrett found the recipe online when making a cookbook for a class in school, and knows I love rhubarb, so showed it to me. Yummy! It makes a lot, and is fairly sweet. We have the other half of the batch, I might add a bit more ginger ale this time, and maybe less sugar next time. But again, it is pretty tasty!

So what's for dinner at your house tonight? This is how it's working around my house this evening, lol! We are a baseballin' family and tonight starts weeknight games for my younger two boys. Luckily, we only have two teams to chase this year, instead of three like last year. I have chicken pot pie with cornbread crust in the works. Tasty either fresh, or warmed up. =)

Saturday, around our house, is the one day we all get to sit down to breakfast together, and we try to fix a good breakfast (when it's not basketball, baseball or hunting season, that is...). Which one would have to go for you? I think I'd let the hot cereal go, that's one I can fix any day of the week. Happy Saturday, all!

If you're wondering what you can do with rhubarb, here is a tasty option! I made these this weekend and they are tasty, but I'm going to have to give them another try, with a lot more flour, as they flattened like pancakes while cooking! lol And if you need some rhubarb to make these cookies with, let me know, I have plenty for sale! $2.50/lb, I'll pick it when you place your order!
