Refrigeration running above safe temperature zones accelerates spoilage. Ovens and steamers that can't hold calibration lead to inconsistent cook times and product loss. Walk-in coolers with failing door seals cause temperature drift that operators often don't catch until product is already compromised.

Keeping equipment properly maintained and running to spec is one of the most direct ways a kitchen can reduce waste. A repair that costs a few hundred dollars can prevent hundreds of pounds of product loss over the course of a season.

Before summer volume hits, your cooking equipment deserves more than a visual check. Run through each of these with your service provider.

Ovens, Ranges, Fryers, Grills & Steamers:
- Inspect and clean burners
- Check and calibrate temperature controls
- Inspect gas lines and connections for leaks
- Clean grease traps and filters
- Inspect and clean interior surfaces
- Check door seals for proper closure
- Verify proper ventilation and exhaust
- Test safety shut-off valves
