Trees are starting to bud and sap flow is pretty slow or stopped so the season is over for me. The weather was on/off but I did well with just shy of 10 gallons of syrup, not bad on only 40 taps. Best part, I’m all cleaned up and bottled already, that’s a record for me as that’s my least favorite part.

My strategic reserve is full and plenty for sale - wood fired, 100% pure local small batch maple syrup!

Damp but nice warm day, no sap flowing today. Had a good run this week, collected about 175 gallons off of 40 taps. Stored sap will spoil fast at this temperature unless it’s on ice/refrigerated so I’ve got about 100 gallons to boil, should be done by early afternoon then relax for a couple days until it cools off and starts to flow again.

Looks like the run that started yesterday will continue this week, about 100 gallons collected and some nearly full bags...

Did you know that during extreme cold like Wisconsin is experiencing now, maple trees can actually explode due to freezing sap expanding inside them? Some people believe the cold also increases sugar content as sugar is natures anti-freeze for the trees, they increase sugar to try to protect themselves. Tapping could start as soon as a month away, warmer weather will be coming soon.

The holiday season is coming up quickly, who needs some pure maple syrup? This stuff has won several blind taste tests and can make your family brunch special.

Maple syrup can also be used as a healthy substitute for sugar in recipes, used for glazes and sauces, topping on ice cream or yogurt, and who doesn’t love a maple old fashioned in the fall!?

$9 for 12 oz bottle and $12 for a pint (16 oz).
