Soo, I was going to do a video. Didn't shave this morning. Did get a hair cut!! You guys have been bugging me to make jalapeño pepper string. So we were running string and I told the guys, "Should we make pepper string at the end of the run?" Both guys said, politely, what the heck! Absolutely no planning. Mixed pepper in the remaining cheese and away we went. We made 75 pounds. I think it needs more pepper, everyone else says it is really close! I did add more pepper in the cooker. We are selling it for the same price as regular string cheese. Heat things up for dairy month in Wisconsin. First feed back from customers was positive.Things just never get boring at Decatur Dairy! Soo. Did a little bike ride today!! Seeing people this morning going into the cemetery!! Respect and honor the soldiers that didn't make it back!! The veterans that did come home to have health problems later. Friends fighting the fight, never complaining!! My Dad fought the Korean War, told me once, I signed up so you guys would not have to!! My number never got called!! All the respect for our fallen, and the veterans that have passed! Heros, all my deepest respect!! Master Steve

3 year old Parmigiano Reggiano I bought 2years ago at the World Cheese Contest! Heard it was young and cured it at 50 degrees for three weeks and put it in the cold until now!! Always something for you I like and it is almost impossible to find!! Great Italian flavor. First time I have cut one!!Still have one last Appenzellar in the store , a mountain Appenzellar cave aged!
