I made some cookies this morning to take to church tomorrow. I haven't made these in awhile and had forgotten how good they are! π
You can use any combination of dried fruit that you like. Today, I used dried cranberries, chopped dried apricots, and golden raisins. I have used dried blueberries and cherries in the past and they are really good too!
***Fruit & Nut Cookies***
1 cup butter
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups quick-cooking oats
1 1/2 teaspoons Apple Pie spice
2 cups diced mixed dried fruit
2/3 cup chopped pecans
Preheat oven to 350 degrees.
In a large bowl, beat together butter and sugars until creamy. Add eggs and vanilla; mix well. Stir in the flour, baking soda, salt, oats, and Apple Pie spice; mix thoroughly. Stir in the dried fruit and pecans.
Drop by tablespoonfuls onto ungreased baking sheets.
Bake for 10-12 minutes until lightly browned.
Cool on baking sheets for a few minutes and then remove to racks to cool completely.
Makes about 4 dozen cookies.
