Behold Finback from !
“I feel cheese has lost its acidity … [a]cidity makes you salivate. It keeps you coming back.” So says cheesemaker Brian Civitello in a recent blog post from the venerable . We couldn’t agree more and it’s a huge part of what we love about Finback.
This cheese is part American original, part homage to the acid-forward, multi-day cheeses of England and central France (and might we add that we sometimes get Castelmagno energy, too!). We just so happened to open a new wheel bursting with typical flavors of fresh yogurt and tangy sour cream with a restrained fruity note and a deep, savory, and brothy finish.
