Behold Finback from !

“I feel cheese has lost its acidity … [a]cidity makes you salivate. It keeps you coming back.” So says cheesemaker Brian Civitello in a recent blog post from the venerable . We couldn’t agree more and it’s a huge part of what we love about Finback.

This cheese is part American original, part homage to the acid-forward, multi-day cheeses of England and central France (and might we add that we sometimes get Castelmagno energy, too!). We just so happened to open a new wheel bursting with typical flavors of fresh yogurt and tangy sour cream with a restrained fruity note and a deep, savory, and brothy finish.

All we want for Christmas is Panettone!

We adore this naturally leavened, enriched sweet bread from Italy. This year, we have two traditional renditions – one from an ~45-year old starter and stuffed with dried fruit and one from a 150+ year-old starter with apricots – and a more contemporary option with amarena sour cherries and reduced balsamic from our favorite vinegar house. Just in time for the holiday season, Brabander Reserve is back! We receive these extra aged wheels of our favorite goat’s milk gouda but once a year. This absurdly flavorful batch is even older than normal and they’re bursting with flavors of brown butter pecans, goat’s milk caramel, and a hint of smooth aged rum. Monger Christy loves them with the roasty, warming flavors of raw Buckthorn Honey!

We’re currently taking orders for Thanksgiving cheese and charcuterie platters, but we’re here for all of your gatherings and celebratory needs. We have set small, medium, and large sizes, but we absolutely love to build custom platters and we’re happy to fill your favorite platter, board, slate, or slab. It’s a privilege to be a part of your special moments and we don’t take it for granted.
