This crunchy, delicious apple and pecan salad with parmesan garlic dipping sauce, makes a light lunch or dinner.

Ingredients
4 tbsp Sutter Buttes Olive oil
1/3 cup shaved Parmesan cheese
3 tbsp apple cider vinegar
1 tbsp honey
1 bag pre-washed arugula (5 oz)
1 large red apple, cored and thinly sliced
1/2 cup roasted Glazed Pecans
¼ cup dried cranberries
½ large red onion, thinly sliced
¼ cup feta cheese, crumbled
½ tsp Himalayan Sea Salt
¼ tsp ground black pepper

Directions
Mix olive oil, vinegar and honey. Toss all ingredients in a large bowl.
Add parmesan and lightly mix everything using a fork.
