Ever wonder why diner cornbread has that crispy bottom and yours doesn't? Cast iron skillet, preheated before the batter goes in. One pan, one trick, completely different result.

CAST IRON SKILLET CORNBREAD

• 1 cup cornmeal
• 1 cup flour
• ½ cup butter, melted
• 1 cup buttermilk
• 2 eggs
• 2 tbsp sugar
• 1 tbsp baking powder
• ½ tsp salt

👉 Preheat oven to 400°F with cast iron skillet inside. Mix cornmeal, flour, sugar, baking powder, and salt. Whisk in buttermilk, eggs, and melted butter until just combined. Carefully remove hot skillet, add a little butter to coat, pour in batter. Bake 20–25 minutes until golden on top and a toothpick comes out clean. Slice warm with butter.
