Coffee Cake

It’s not made with coffee and it’s sort of a cake, and it’s delicious!

Cake Ingredients

2 cups all purpose flour
½ cup sugar
2 tsp baking powder
1 tsp cinnamon
½ tsp salt
1 cup milk
1 large egg
2 tsp vanilla extract

Topping

½ cup brown sugar
½ cup white sugar
½ cup all purpose flour
2 tsp ground cinnamon
¼ cup cold butter, diced

Make the topping

Add the dry ingredients to a bowl and mix thoroughly.
Add the diced butter and cut into the flour using a fork or 2 knives. You can also use a small food processor to make the crumb topping. Topping should be crumbly with the butter mixed into the dry ingredients.

Make the cake

Beat the sugar and butter in a mixing bowl. Add the remaining dry ingredients and mix well. Add the milk, egg and vanilla and mix until just combined.

Place half the batter in the prepared pan. Sprinkle a thin layer of the crumb topping across the batter. Pour the remaining batter in and spread evenly. Top with remaining topping and spread evenly.

Bake for 40 minutes at 350°F or until a toothpick inserted in the middle comes out clean. Let cool for 5-10 minutes before cutting.

Grain Salads

Grain salads are a great way to add some variety to your menus. They’re an easy way to mix and match what you already have and what you enjoy.

For the grain component, try quinoa, bulger, farro, wild rice or brown rice.

For vegetables, consider bell peppers of all colors, cucumbers , carrots, corn, peas, onions, green, yellow or red peppers. Canned beans are a great addition.

Fresh herbs, such as parsley, basil, dill.

Nuts add crunch and extra flavor. Cheese adds a bit of savory.

Dress with a simple vinaigrette or use a bottled version.

Quinoa Salad

1 cup uncooked quinoa
2 cups water

1 cup chopped cucumber
½ cup parsley, chopped
½ mint, chopped
¼ bunch fresh dill, minced
1 small red onion, chopped
1 15 oz can garbanzo beans, rinsed and drained

Dressing

Zest and juice of 1 lemon
¼ cup extra virgin olive oil
1 Tbs maple syrup
Salt and pepper to taste

½ cup crumbled feta cheese
½ cup roasted and salted pistachios, chopped

Rinse and drain the quinoa. Place the quinoa and water in a small saucepan and bring the water to a boil. Reduce to a simmer, cover and cook for about 15 minutes. Fluff with a fork and let cool for 5-10 minutes.

Chop all the vegetables and herbs.

In a medium bowl, stir together the quinoa, cucumber, chopped herbs, onions and garbanzos.

Whisk the lemon juice, maple syrup, olive oil, salt and pepper in a small bowl and pour over salad. Toss to combine.

Top with the crumbled feta and pistachios.
