No-Bake Honey Peanut Butter Energy Bites
Ingredients
1 cup rolled oats (old-fashioned or quick oats)
1/2 cup creamy peanut butter (or sunflower seed butter for nut-free)
1/3 cup honey
1/2 cup mini chocolate chips (or raisins/dried cranberries)
1 tsp vanilla extract
Pinch of salt
Instructions
Combine: In a medium bowl, stir together the oats, peanut butter, honey, vanilla extract, and pinch of salt until well mixed.
Fold in mix-ins: Gently stir in the chocolate chips.
Roll: Scoop out tablespoon-sized portions and roll them into 1-inch balls between your palms. (Tip: If the mixture feels too sticky, chill the bowl in the fridge for 15–20 minutes first.)
Serve or store: Eat immediately, or store in an airtight container in the refrigerator for up to a week.
